Funky barbecued porchetta
Serves 4 people
Ingredients
4 thick slices of porchetta (Gammon is also fine but dryer)
1 garlic clove thinly chopped
1 tbsp thinly chopped ginger
1 tbsp soy sauce
1 tbsp olive oil
1 tbsp Brown rum
1 tbsp organic honey
1 pinch of chinese 4 spice
salt & pepper
Preparation
Pour the rum in a bowl, add honey and stir. Add all the other ingredients apart from the meat and mix them all. Put the porchetta on a flat dish and spread the marinade on it. Leave in a cool place for a couple of hours. Ready to barbecue or roast in the oven !
