Pork stew "goulash" style
Serves 4 to 6 people
Ingredients
1 kg of pork in large cubes
2 big onions, sliced
3 green peppers peeled and cut in large cubes
2 tbsp ground paprika
1 tbsp ground cumin
1 tbsp fresh or dry marjoram (if you can’t find it, use oregano)
35 cl of full-bodied red wine
300 g(1 tin) of chopped tomatoes OR fresh chopped, peeled and seedless tomatoes
Salt & pepper
olive oil (or lard which is more authentic)
Tip : marjoram and oregano are from the same family tree. The difference is subtle...
Preparation
1) Heat the olive oil (or lard) and cook the onions till they turn light golden. Add the cubes of pork and cook for 5 minutes till they get brown. Add salt and pepper. Sprinkle with cumin, paprika and marjoram. Cook for 2 min then add red wine. Cook for 5 min then add the tomatoes.
2) Cook over a low heat for 20 min. Then add the green peppers. Cook for +/- 30 min. Assess and eventually stop cooking. It can be reheated later until the meat gets really tender. If it gets too dry, add a little bit of water.
Tip : Works well with rice. I used some basmati and added a little bit of tumeric in the cooking water.
