Bacon & onion quiche
Serves 4 people
Ingredients:
1 puff pastry for a 25cm pie mould
Blue cheese
Grated cheese
Optional : leftover cheese (Gouda, Emethael...) cut in little bits
5 middle size onions
4 slices of bacon – thick cut
4 eggs
400 ml cooking cream
Thyme
Salt & pepper
Breadcrumbs
Olive oil
Preparation
Cut the onions in four parts. Cut each part into medium slices. Heat some olive oil in a pan and gently cook the onions with salt, pepper and a little bit of thyme.
Cut the bacon into cubes and fry them.
Heat Oven 180°C/fan.
Whisk the eggs and the cream together. Roll out the puff pastry on the mould (I use parchment paper unnder).
Spread the bacon on the pastry. Then add the blue cheese and leftover cheese. Pour the eggs onto the preparation. Sprinkle grated cheese and breadcrumbs on top. Cook for +/- 25 minutes.
